- On-site dry-aging program (28 to 45 days) โ visible from the dining room. Charlotte’s heat and humidity make off-site aging risky; we control the entire process from primal cut to plate. Our 35-day bone-in ribeye is the most-ordered steak on the menu.
- In-house butcher, hand-cut daily โ every steak portioned the morning of service. No frozen, pre-portioned cuts. The butcher’s window-glass room is visible from the bar.
- Independent sourcing from Allen Brothers and Niman Ranch โ we cherry-pick from each shipment and reject sub-standard primals. Marbling varies week to week because we serve the best of what arrived, not what a corporate contract obligates us to buy.
